Blueberry Pancakes

Vegan banana & blueberry Pancakes

Ingredients

  • 1 banana

  • 1 tbsp sunflower oil, plus extra to oil the pan

  • 1 tsp lemon juice

  • ½ tsp ground cinnamon

  • 100g plain flour

  • ½ tsp baking powder

  • 250ml soya milk

  • Greek Yoghurt/Syrup, sliced banana and berries, to serve 

    Method

  • STEP 1

    In a mixing bowl, mash the banana with a fork and whisk in the oil, lemon juice and cinnamon. Add the flour and baking powder. Stir while gradually adding the soya milk. The batter will take on the consistency of yogurt. 

  • STEP 2

    Heat a little oil in a frying pan over a medium heat. Add 2 tbsp of the batter to make American-style pancakes. You will be able to make about 4-5 at a time. Fry on each side for 2-3 mins until golden. Serve with syrup and/or Greek Yoghurt, sliced banana and berries

Smashed Avocado & Poached egg on toast

Ingredients

  • eggs

  • 1 small ripe avocado

  • 1/2 lime or lemon (juice only)

  • 2 slices seeded wholemeal/soda bread

  • 2 handfuls rocket

  • Salt & Pepper to taste

Method

  • STEP 1

    Heat a pan of water, carefully break in the eggs and leave to poach for 1-2 mins until the whites are firm but the yolks are still runny. 

  • STEP 2

    Toast the Bread. Halve and stone the avocado, then scoop out the flesh and smash into a bowl, add the lime/lemon. Spread onto the toasted bread. Add the eggs, grind over salt & black pepper and add a handful of rocket to each portion. 

Tip: For a great flavour combo, add some lightly fried cherry tomatoes
